Prosecco & Pizza – a love affair!

Prosecco and pizza is the PB&J of Italy! Prosecco DOC is affordable, dry and slightly fruity, and growing in popularity in Montreal. This sparkling white wine is to Italy, what champagne is to France and cava is to Spain. Prosecco is delightful on its own, but it’s heavenly in an Aperol Spritz; an Italian aperitivo cocktail that’s already popular in Montreal.

An Aperol Spritz is 3 parts Prosecco DOC, 2 parts Aperol, and 1 splash of soda. Served with ice in a tumbler or large wine glass, it is the most popular Italian cocktail. Commonly garnished with an orange slice and green olive, the combination sounds odd but it is a classic. Fiorellino had the spritzs’ flowing, and tons of pizza, making for a fabulous evening.

Melanzane e Zucchini: Roasted eggplant – Zucchini – Cherry tomatoes – Mint – Garlic

We were taught that some pizza toppings pair better with varieties of Prosecco (bru, extra dry and dry), it was interesting to learn so much about the prosecco and pizza love affair. Fiorellino was the perfect location, we were already in love with this Italian pizzeria before they hosted this event. This fabulous restaurant knows a thing or two about pizza, and they impressed us once again with their authentic Italian ingredients, perfect dough, and tomato sauce with the right amount of acidity.

Napoli: Oregano – Garlic – Pickled chili peppers – Anchovies

“The acidity of the tomato sauce highlights a mosaic of flavours that awaken the wine’s fruity features. The creamy texture of the cheese on the pizza blends seamlessly with the texture and density of Processo wines. Also, because Prosecco is a white wine flecked with a nice minerality, the combination of flavours from the pizza toppings strikes a delicious balance,” explains Guénaël Revel, who is also known as Monsieur Bulles!

Cacio e Pepe: Fior di Latte – Pancetta – Black pepper – Pecorino

Our favourite pizza of the night was Fiorellino’s Cacio e Peppe pizza with fior di latter mozzarella, pancetta, black pepper and a generous amount of salty pecorino cheese. Honestly we almost forgot how much we love Fiorellino until we returned for this event. Now we can’t stop thinking of their mouth watering pizzas, with an accompanied Aperol Spritz of course!

Prosecco & Pizza is a torrid love affair! We recommend this perfect Italian combination, particularly at Fiorellino where you will enjoy authentic Italian pizza, and dress up your prosecco DOC in an Aperol Spritz.
